Hass avocados freshly picked from the tree in Bétera (Valencia)

Avocados begin to ripen after harvesting.

They should ripen little by little at home, during a week, until the avocado darkens and begins to be soft.

If you remove the stalk, they ripen earlier. They should not be kept in the refrigerator to ripen. You can accelerate the ripening if they are wrapped in kraft paper or newspaper and faster if they are wrapped with an apple.
