These are the original tigernuts, grown in the orchard of Alboraya (Valencia), perfect for making a real tigernut milk.

How to make horchata:
Ingredients:
200g of tigernut
1 litre of water
stevia or sugar
Instructions:
1.Leave about 200g of tigernuts to soak in water for about 24-48h in the fridge.
2.Change the water a couple of times.
3.Drain the water and put the tigernuts in the blender, in a jug or in the food processor you have and add a third of the litre of water we will use to make the tigernut milk.
4.Blend well and add the rest of the water, then blend again.
5.Now it's time to tone your arms, you have to filter the horchata. We usually use a cloth to make the work easier, but you can also use a cloth strainer. Drain, or with the help of the pestle of the mortar, press so that all the horchata filters through.
6.To the resulting horchata add stevia to taste or 50 - 80 grams of sugar and mix until dissolved.
7.Keep in the fridge for at least one hour, so that it is very cold, and to serve, put the glasses in the freezer for a few minutes to make the whole thing super refreshing.
8.You should consume it the same day it is made or freeze it immediately, to consume it whenever you want.
